Making Breakfast Special...

I try to have "variety" in my breakfast menu. However, I know that one breakfast food that my kids will eat is cereal. Honestly, it is also a go-to even for dinner! My kids are big cereal eaters and usually I don't hear any grumbling when pouring the cereal. My kids do love a variety of cereal...they each have their favorites. I really believe that my kids should eat what they are served especially for dinner. But, I am a bit of a "softy" for breakfast and try to have different choices for the kids. It makes the mornings a little more easier and smoother.


Another favorite "secret" around here is cinnamon-sugar shaker... We use it on bagels, pancakes, toast and even our oatmeal. I have to be careful that my kids don't use to much. But, it somehow makes everything a little sweeter and nicer plus my kids love to shake it! I try to balance out the cinnamon -sugar shaker with taking their vitamins each day.
I guess that is how I mentally "justify" the "shaker"! smile....

  3. I cook my eggs in a muffin pan - 8 min at 350 degrees turns out 12 perfectly cooked over easy eggs all at the same time!

  11. My secret is that I always eat Special K cereal with strawberries and soymilk instead of regular milk. 1/2 the fam is lactose intolerant so soymilk is the answer. I never get tired of it. It's just so delicious!

  30. On the weekend I make batches of mini frittatas in muffin tins. I use eggs, bacon or sausage, cheese, potatoes and chives - or anything else I have extra of in the fridge. I bake them up and then pack them up and freeze them. In the mornings the kids pop them in the toaster and they are like a gourmet breakfast each day. They love them, and really get their day off to a good start.

    My secret is when all else fails and you need to get some protein in your picky eater, take a moz. cheese stick, microwave it for 25 seconds, and the kids think they are having a moz. cheese stick from a restaurant minus the coating and added fat! They LOVE them!

  43. Granola is our family staple. Sometimes we just pour some soymilk over it and have granola cereal. Or we mix it up in our yogurt with some fruit and make a yogurt parfait. It is also delicious on ice cream (but not for breakfast though!).
